Daylesford, the Cotswolds
As Eliza introduces you to the many facets of natural perfumery, you will be led to the Daylesford Cutting Garden to gather inspiration from our own organic, homegrown roses and blooms.
You will then learn how to make your own perfume and bath oil using the complexity of a natural rose fragrance using beautiful natural materials such as Bulgarian, Turkish and Moroccan rose essential oils and absolutes.
At the end of the workshop, you will take home your creations and a set of materials to continue creating fragrances on your own.
Daylesford, the Cotswolds
Mix delicious cocktails using the unusual ingredients most often found in perfumery. You will be able to sample the scents and tastes of beautiful florals such as tuberose, rose and orange flower and wilder flavours such as tonka bean.
The workshop will be held in early evening in the Chelsea Garden Room; the perfect way to unwind as the sun sets at the end of the week.

Enliven your cooking with ingredients more commonly found in perfumery such as rose, violet, orange flower, jasmine and lavender amongst others.
Using charts and under Eliza’s guidance, you will learn about the smells and tastes of these exquisite floral ingredients.
At the end of the session, you will return home with delectable treats and recipes to continue the exploration.

The Art of Fragrance: How Scents are Made
Learn about the different ingredients used to make perfume, and how they are combined to create accords – the building blocks of fragrance – as you sample scents that have been specially created to represent works of art.

Feeling romantic? Join me at the Wallace Collection for an after-hours scented tour of the museum. Experience the fragrances loved by Madame de Pompadour, Louis XV’s mistress, and learn about the headily perfumed world of Versailles where scent saturated the furniture, fountains and guests. I will create scent interpretations of Boilly’s Les Malheurs de l’amour (The Sorrows of Love) and Albani’s Cupid and Venus to experience while viewing the paintings. This will be followed by a workshop to make a sensual fragrance for yourself or your partner, using ingredients such as vanilla, musk, sandalwood, amber and rose.

This class will demonstrate how the floral ingredients often used in perfumery can enliven your cooking.
Taught by Guardian food writer Felicity Cloake and perfumer Eliza Douglas, you will smell the many exquisite natural materials used in fine fragrance and learn how to incorporate them into desserts, cocktails and chocolate to fabulous effect. You will be sampling Felicity’s Violet Marzipans, making (and drinking!) Tony Conigliaro’s Lipstick Rose cocktail based on Frederic Malle’s glamorous scent (using rose, raspberry, violet, fizz, bitters) and creating Geranium Apple snow.
Over the course of 3 hours you will:
- Learn about natural floral materials and their origins
- Make chocolates, cocktails, desserts using these ingredients
- Expand your repertoire of what ‘can’ and ‘can’t’ be used in the kitchen
All ingredients, naturals chart and resource list will be provided – just bring an open mind and a sense of fun!

Accords
10:30am – 1:00pm
In these classes we’ll be making accords, the building blocks of perfumery. An accord is a balanced combination of several notes blended together to make a single impression. Accords can be used to simplify the process of scent creation.
We’ll learn about the different materials in these accords and where they fit into fragrance families as a way to understand how to categorize them. We’ll also see how their facets overlap with one another, creating a kaleidoscope of connections, ‘bridges’ between two materials. Click on individual classes to find out more and to register.
